Spicy Honey-Mustard Chicken Wings

Description:

Sweetly sharp and herby chicken wings.

    Ingredients:
  • cooking oil spray
  • 1 1/2 pounds chicken wings
  • 1/2 cup honey
  • 1 tablespoon hot pepper sauce (or more or less to taste)
  • 3 tablespoons whole-grain mustard
  • 2 tablespoons Dijon mustard
  • 1 tablespoon cider vinegar
  • 2/3 cup unseasoned breadcrumbs
  • 1 tablespoon chopped fresh thyme leaves
  • 2 teaspoons chopped fresh sage leaves
  • 1 teaspoon finely chopped fresh rosemary leaves
  • 1 teaspoon ground cayenne pepper (or more or less to taste)

Instructions:

Heat the oven to 400° F. Spray a baking sheet with cooking oil spray. Remove the tips from the wings and separate the remaining sections at the joint. Combine the honey, pepper sauce, mustards and vinegar in a bowl. Combine breadcrumbs, herbs and pepper on a tray or plate. Drop the wing sections into the honey mixture to coat fully, then drop them individually into the crumb mixture. Turn or shake to cover fully and lay the wing pieces on the baking sheet, Bake, turning occasionally for about 25 minutes, more or less, until the wings are nicely browned. Serve hot or at room temperature.

These are lower in fat than the usual chicken wings since they aren't deep-fried. To make them spicier, double or triple the amounts of hot pepper sauce and cayenne pepper and serve them with a hot dip. They can be done outdoors in a covered grill and that would give them a smoky flavor.
