One Hour Italian Sausage Soup

- Ingredients:
- 1 lb. Italian sausage
- 1 c. onion, chopped
- 2 cloves garlic, sliced
- 2 carrots, chopped
- 1 tomato, chopped
- 1 14 oz. can diced tomatoes, with Italian seasoning
- 2 14 oz. cans beef broth
- ¾ c. dry red wine, divided
- 1 pkg. SOUP BLEND, whole sprigs
- 1 pkg. CHIVES
Instructions:
Cook sausage in 4 qt. soup pot; drain and set aside.
Deglaze the pot by adding ¼ c. red wine and scrape up the cooked on bits of sausage. Stir in onion and garlic; saute for 5 minutes, stirring occasionally.
Add carrots and cook for an additional 5 minutes. Stir in tomatoes, broth, and red wine. Simmer for 10 minutes.
Blend in sausage and SOUP BLEND. Bring to a boil; simmer 30 minutes. Discard whole sprigs of herbs;
garnish each serving with a sprinkling of 1 in. chives.
Serves 6.

For a heartier version, add 1 c. small pasta noodles when you add the herbs.
