Old Fashioned Macaroni & Cheese

    Ingredients:
  • 1 c. light cream
  • 1 pkg THYME
  • ½ lb. elbow macaroni
  • 2 c. sharp cheddar cheese, shredded
  • 1 pkg. CHIVES, ¼ c. chopped
  • 3 tbsp. margarine
  • ⅓ c. low fat sour cream
  • 2 eggs, well beaten
  • 1 tsp. cracked black pepper
  • ½ tsp. seasoned salt
  • ½ c. crushed croutons
  • ½ pkg. SAGE, leaves only
  • 2 tsp. oil

Instructions:

bring cream to a simmer in a small saucepan, and immediately submerge the THYME (whole sprigs). Cover and remove from heat. Set aside for 30 minutes.

Cook macaroni according to package directions. Drain and stir with cheese and CHIVES. Blend margarine, sour cream, eggs, pepper, and salt, and add to macaroni. Discard herb sprigs from the cream and add to the macaroni. Pour into an oven proof casserole dish and top with crouton crumbs. Bake at 350˚F for 30 minutes.

Heat oil in small nonstick skillet to sizzling. Drop in SAGE leaves and fry 1-2 minutes until crispy. Drain on paper towels. Just before serving, top each portion with sprinkling of the fried SAGE. Makes
8 servings.
