Green Goddess Dressing

    Ingredients:
  • 1 pkg. SALAD BLEND, stems removed
  • 1 tsp. anchovy paste
  • 1 small clove garlic, peeled
  • ½ tbsp. apple cider vinegar
  • ¼ tsp. sugar
  • ¼ c. olive oil
  • ¼ c. sour cream or plain yogurt
  • 2 tsp. fresh lime juice
  • 1 small avocado, pitted

Instructions:

Blend herbs in a food processor, with anchovies, garlic, vinegar, & sugar to create a paste.

Add olive oil in a steady stream, with food processor running. Blend well, scraping sides of the bowl. Continue to puree with sour cream, juice, and avocado.

Serve immediately over salads, or as a dip for fresh crudités or topping for grilled Tuna.

Makes 1 cup.

Shenandoah Growers suggests:

Either Zinfandel or Chianti matches nicely.
