Bean Dip with Basil and Oregano

Servings: Serves 4 to 6

    Ingredients:
  • 1 can cannellini beans, rinsed and drained
  • 3 cloves garlic
  • ½ cup fresh basil leaves
  • 3 tablespoons fresh oregano
  • 2 tablespoons fresh squeezed lemon juice
  • 1 teaspoon grated lemon rind

Instructions:

Use the food processor fitted with a steel blade to process all ingredients except the beans. Process 5 seconds, scrape the sides and process 5 more seconds. Add the beans. Process about 10 seconds and stop. You should still be able to tell that it is beans. Season with salt and pepper to taste. Serve with fresh vegetables or crackers.
