Why does basil turn black?
Neither basil nor oregano should be refrigerated but rather kept in a cool location (no greater than 55°F). The leaves should not be sprinkled with water, either. Basil will turn black if the leaves are wet and/or they have been refrigerated.
How do you care for the hydroponic (living) basil?
Put the plant in a clear glass, just covering the roots with water. Put the glass where the plant will get light. DO NOT REFRIGERATE. Pinch off the leaves and use in your favorite recipes requiring fresh Basil. The plant will continue to grow for a week or two, depending on how many leaves are harvested. Do not put the plant in soil.
Is there a nutritional difference between fresh cut and dried herbs?
Yes. Fresh herbs contain amounts of anti-oxidants that diminish in potency as the herb dries. Oregano is very high in anti-oxidants. (1 tablespoon of oregano leaves has the same amount of anti-oxidants as 1 apple.)
How can I use the “extra” herbs that I haven’t used in a recipe?
One suggestion is to put the leaves in olive oil and freeze in an ice cube tray. You can just drop a cube or two into your favorite soup or sauce for flavoring.
