Substituting Fresh Herbs for Dried (video)

In general, use 2 to 3 times more fresh herbs than the amount of dried listed in a recipe.  For bay leaves, use an equal or slightly smaller amount of fresh leaves in place of the dried. Here’s a great video on the topic:
