Fresh Guacamole
This twist on guacamole leaves the vegetables chunky to create a colorful dip that will keep your guests coming back for more. A wonderful addition to any spread.
Ingredients
- 4 ripe avocados, seeded and peeled
- 2 tablespoons fresh lemon juice
- ½ cup small cherry tomatoes, cut in halves
- ¾ cup cucumber, seeded and finely diced
- ½ cup red onion, finely chopped
- ½ cup crumbled feta cheese
- 1 cup fresh cilantro, chopped
Instructions
- Dice the avocados, stir in lemon juice.
- Fold in remaining ingredients until well mixed.
- Serve with toasted pita wedges.
