Traditional Chimichurri

Nothing uses up fresh herbs faster than Chimichurri. Traditional in South American cuisine, Chimichurri is a sauce made with fresh herbs and chiles that is usually served as an accompaniment to grilled meats and fish. Spicy and full of flavor, this Chimichurri recipe gets its kick from jalapeno peppers, garlic, fresh limejuice, and a healthy serving of fresh mint, basil, cilantro, and parsley. Here, we served it spooned over grilled flank steak, but its flavors are just as vibrant and delicious when paired with grilled swordfish, shrimp, or chicken breasts.

Ingredients

  • 1 bunch fresh mint
  • 1 bunch fresh basil
  • 1 bunch fresh parsley
  • 1 bunch fresh cilantro
  • 1-2 jalapeno peppers
  • 3-4 garlic cloves
  • salt
  • ½ cup olive oil
  • 2 limes

Instructions

  1. Rinse and dry herbs. Remove any woody stems.
  2. Place herbs in blender or food processor.
  3. Remove seeds and membrane from jalapenos, rough chop, and place in food processor.
  4. Peel garlic cloves and place in food processor.
  5. Add salt to taste.
  6. Add olive oil.
  7. Squeeze limes into food processor.
  8. Process until smooth, tasting for flavor. Add more salt, jalapeno, or garlic as necessary.

Cooking time: 20 minutes

Yield: about 1 cup
