Mango Cilantro Salsa

With the fresh clean taste of cilantro bringing out the tangy, citrus sweetness of the mangoes, this salsa is as good on tortilla chips as it is on grilled swordfish.  For an extra special evening, serve it over fried catfish tacos with a slice or two of avocado.

Ingredients

  • 2 mangoes, peeled and diced
  • 1 small Bermuda onion, finely chopped
  • 1 yellow pepper, diced
  • ½ teaspoon cumin
  • ¼ teaspoon sea salt
  • ½ teaspoon coarsely ground pepper
  • 1 orange, cut into sections
  • ¼ cup Cilantro, chopped

Instructions

  1. Blend mangoes, onion, pepper and spices.
  2. Cut the meat out of each orange section and dice.
  3. Add to the mangoes and squeeze juice from each section over all.
  4. Toss with fresh Cilantro.
